I'm connecting a sub woofer that has RCA plugs. My stereo has traditional +/- speaker wire connections. I've connected it both ways and it seems to sound better with the red shielded wire connected to the + speaker wire. Is this correct?

A shield was never meant to carry any signal. As it says shield is to provide shield from inteference from sources. But since you have two wires why not dissasemble the plug and put two wires. The +/- wires means nothing electrons do not know color codes. However the phasing of speakers means a lot that is the reason for -/+ so yes connect the + to + and - to -.THE CENTER PLUG IS ALLWAYS THE [+] so tie the + to it.
